In this episode, Tracy talks about the very long and troubled history of The Eastern State Penitentiary in Philadelphia, Pennsylvania which was founded in 1829 and was abandoned in 1971. It was initially a Quaker led vision of solitary confinement leading to religion and enlightenment. Although this experiment didn't really work to rehabilitate, it did quell violence. As overcrowding took hold, violence, riots, and escapes were rampant.

The cocktail in today's episode is the Philly Cheesecake. Recipe below:
3 barspoons of mascarpone cheese
4 oz. vanilla vodka
1 oz. triple sec
1 1/2 oz. simple syrup
1 1/2 oz. heavy whipping cream
Mix all ingredients in shaker with the barspoon. Add ice and shake vigorously. Double strain into coupe glasses. Garnish with a lemon curl and grated dark chocolate. This recipe could be customized with any additives you like!
